The Perfect Cupcakes

Last weekend, Heather and I threw a baby shower for Rachel. Everything turned out SO WELL! We had a vintage theme, with references throughout to “hens and chicks” — all very classic Rachel. You can see more pictures in this Flickr set.

And because the cupcakes we made were pretty much to die for, I wanted to share the recipe with you.

+ 1 box vanilla cake mix
+ 1 small package lemon instant pudding
+ 1/2 tsp. grated lemon rind
+ 4 eggs
+ 1/2 cup oil
+ 1 cup cool water

Mix and bake according to package instructions. We used aluminum baking cups.

+ 1/2 cup unsalted butter
+ 1/2 c. white shortening (can substitute butter… but we went “traditional”)
+ 1 tsp. vanilla
+ 1 bag powdered sugar
+ 1-2 tbsp. milk

Mix the butter and shortening together. Add the vanilla and mix. Add about 2 cups powdered sugar and mix well. Add more sugar until the mixture becomes a bit dry in texture. Then add 1 tbsp. of milk and mix. It’s up to you on when you are finished. Add more powdered sugar if the frosting is too runny, or add more milk if the frosting is too thick and dry. Heather and I didn’t have any proper decorating tools — so we squeezed the icing out of a hole cut in the corner of a Ziploc bag! Worked like a charm.
